DDK-269 Epic - Align metadata documentation, repository models, and data

This merge will mark an important shift in how we define metadata fields and implement them in repository models and change sets.

The key change is establishing a dedicated JSON schema for metadata, and using it as the basis for resource attribute definitions and change set properties. A major sub-goal was the removal of legacy and unused metadata fields to create a document that accurately reflects current usage and curation practice.
